McCaffrey's Arugula Pesto Recipe
Try McCaffrey's outstanding arugula-pistachio pesto recipe using BrightFarms' bold and peppery arugula!
Ingredients:

1 5oz box of BrightFarms baby arugula
-
3 tbsp pistachios
-
2 tbsp Dijon mustard
-
2 tbsp black pepper
-
1/4 cup parmesan cheese
-
1/2 cup extra virgin olive oil
-
1/4 cup white balsamic vinegar
-
salt (to taste)
Directions:
With kitchen aid mixer or blender, puree arugula and 2 tbsp of olive oil. Add pistachios and puree. And remaining ingredients (oil last) and puree again! Serve on a crostini (pictured above) or with your favorite pasta. Eat and enjoy!
